I elderberry jam
4 cups crushed elderberries
3 cups sugar
1 (3 oz) liquid pectin
Cook crushed berries over medium heat for 15 minutes and strain through a food mill, removing the seeds.
Place sauce in a large pot of tension type, and add sugar and mix well. Cook over medium heat until the sugar is completely dissolved. Add pectin and boil for 1 minute. Remove the foam.
Pour the hot jam into sterilized jars. Label and store store in a cool, dry place.
The shelf on the shelf for a year.
Makes about 3 to 4 liters.

Note: Elderberries should never be eaten raw. All parts of the plant contain the toxin hydrocyanic acid which is destroyed by cooking. The red elderberry (S. pubens) is considered toxic and should not be used for cooking, not enough to destroy the toxin.
